WHAT TO COOK TONIGHT

Korean meals in 30 minutes or less

Start with the main ingredient you have. These times are recipe estimates, not kitchen-tested guarantees. Cooked rice, rotisserie chicken and packaged patties need to be ready before you begin; thaw frozen ingredients safely in advance.

Choose by the job you need to do

For a main meal, try fried rice, noodles or a chicken soup. Radish salads and marinated eggs are side dishes: pair them with rice and a protein. Cold dishes need chilled ingredients.

Noodles · 25 min · 2 servings

Hambak Uni-jjajang (함박유니짜장): Hamburger-Steak Black Bean Noodles

Springy Korean black-bean instant noodles are wok-tossed with deeply browned onion, crumbled hamburger steak, soy sauce, and a warm pulse of gochugaru.

Heat level: Medium as written, with 2 tablespoons gochugaru layered over a generally mild jjajang seasoning. For mild, use 1 to 2 teaspoons mild gochugaru; for hot, use 3 tablespoons. Do not increase the soy sauce when reducing the chile.

Stew · 30 min · 4 servings

Hambak Budae-jjigae (함박부대찌개): Hamburger Steak Army Stew

Sour kimchi, canned luncheon meat, and crumbled Korean hamburger steaks bubble in a fiery gochujang beef-bone broth, with springy ramen added at the table.

Heat level: Hot as written, with 4 tablespoons gochugaru, 2 tablespoons gochujang, spicy ramen powder, and kimchi. For medium heat, use 2 tablespoons mild gochugaru and one-third of the ramen powder. For mild, use 1 tablespoon mild gochugaru, 1 tablespoon gochujang, and omit the ramen powder; add a little unsalted stock if reducing those salty seasonings.

Yunjumo Musaengchae (윤주모 무생채): Korean Radish Salad

Crisp Korean radish matchsticks are gently dressed with coarse gochugaru, scallion, green plum syrup, saeujeot, and anchovy fish sauce for a bright, savory banchan.

Heat level: Medium as written. For mild heat, use 2 teaspoons/about 5 g mild coarse gochugaru; for hot, add 1/2 teaspoon fine gochugaru. Do not replace gochugaru measure-for-measure with cayenne.

Rice · 30 min · 2 servings

Air-Fryer Nurungji Kimchi Fried Rice (누룽지 김치볶음밥)

Tangy kimchi rice, sausage, corn, egg, and mozzarella turn crisp at the edges in the air fryer—no stovetop frying required.

Heat level: Mild to medium, depending on the kimchi. Use 1 teaspoon gochugaru or omit it for less heat; add sliced Cheongyang chile before cooking for a hotter version.

Pancake · 25 min · 4 servings

Spam Kimchi Jeon (스팸김치전): Crispy Kimchi Pancakes

Tangy aged kimchi and crumbled luncheon meat make these Korean pancakes crisp at the edges, juicy inside, and deeply savory.

Heat level: Mild to medium depending on the kimchi. Add 1 teaspoon gochugaru for more heat or rinse very spicy kimchi briefly for a gentler pancake.

Soup · 30 min · 4 servings

Dak Baeksuk (닭백숙): Easy Rotisserie Chicken Soup

A supermarket rotisserie chicken turns into a comforting Korean-style baeksuk with beef bone broth, garlic, and scallion in just one pot.

Heat level: Not spicy. Serve chopped Cheongyang chile or gochugaru on the side.

Side dish · 20 min · 4 servings

Musaengchae (무생채): Korean Radish Salad with Wasabi

Crisp Korean radish gets a bright sweet-sour dressing and a surprising touch of wasabi in this fast, refreshing side dish.

Heat level: Sharp rather than chile-hot. Start with 1 1/2 teaspoons wasabi for mild heat and increase to taste.

Noodles · 25 min · 1 servings

Memil Guksu (메밀국수): Spicy Cold Buckwheat Noodles

Cold buckwheat noodles meet a citrusy Cheongyang chile relish, tsuyu broth, grated radish, and seaweed for a vivid Korean summer bowl.

Heat level: Hot. Use 1–2 jalapeños for mild heat, 2–3 serranos for medium, or all 6 Cheongyang chiles for the original intensity.

Make the shopping list shorter

Read the recipe-specific swaps before buying an unfamiliar ingredient. For a milder meal, choose a recipe whose heat level is already mild; simply removing a fermented chile paste also removes salt, sweetness and body.
